Hey Jeremy,
I guess I can answer that in two ways. My absolute favorite is the Permit. They are in my opinion, the top gamefish and the one I find the most fun to go after.
With this being said, I also like to fish for whatever is best on the day I am out. There are lots of days where there are plenty of permit around, but it is slick calm and they are tough to approach. On these same days, the tarpon fishing can be fantastic. The weather dictates what will be best and if at all possible, that is what I want to be doing.
While I like Permit, Bonefish, Tarpon, Redfish and Snook the very best, the truth is that I would happily fish for goldfish in a bowl. I don't care. I love it all. Fly, Spin, Bait, Lures, any way, anywhere, anytime!

To properly cinch down 80 pound mono, you are definitely going to need pliers. I really dont know if I could cinch down an 80 pound 4 turn uni with my bare hands and would probably not get it quite right with gloves on either.
